Known by many names: fried rice or Cantonese rice. The Chinese sausages are optional and you can also replace them by shrimps. This recipe can also be made vegetarian by replacing the chicken with tofu.

  1. Put the rice to cook. Note that for Chinese or Thai fried rice recipes, you should absolutely avoid overcooking the rice at all costs.
  2. Cut chicken into small pieces. Marinate with oyster sauce, salt, pepper and 4 crushed garlic cloves.
  3. Once your rice is cooked, fry the chicken pieces in a little vegetable oil in a wok or pan until golden brown. Set aside in a bowl.
  4. Sauté your mixed vegetables in the same pan with a crushed garlic clove, salt and pepper. Add the thinly sliced sausages 5 minutes before the end of the cooking time. Set aside.
  5. Beat the eggs, add salt and pepper.
  6. Pour two spoonfuls of sesame oil into your cooking vessel used for vegetables and chicken. Heat over low heat. Pour in the eggs, let cook for a few seconds, then pour in the chicken, vegetables and sausages.
  7. Stir for a few seconds, then pour in the rice. Sauté the rice, stirring constantly, and add a little salt, pepper and a tablespoon of soy sauce. Adjust the seasoning while continuing to stir quickly.
  8. Sprinkle with chopped chives.
