Ingredients
- Put the rice to cook. Note that for Chinese or Thai fried rice recipes, you should absolutely avoid overcooking the rice at all costs.
- Cut chicken into small pieces. Marinate with oyster sauce, salt, pepper and 4 crushed garlic cloves.
- Once your rice is cooked, fry the chicken pieces in a little vegetable oil in a wok or pan until golden brown. Set aside in a bowl.
- Sauté your mixed vegetables in the same pan with a crushed garlic clove, salt and pepper. Add the thinly sliced sausages 5 minutes before the end of the cooking time. Set aside.
- Beat the eggs, add salt and pepper.
- Pour two spoonfuls of sesame oil into your cooking vessel used for vegetables and chicken. Heat over low heat. Pour in the eggs, let cook for a few seconds, then pour in the chicken, vegetables and sausages.
- Stir for a few seconds, then pour in the rice. Sauté the rice, stirring constantly, and add a little salt, pepper and a tablespoon of soy sauce. Adjust the seasoning while continuing to stir quickly.
- Sprinkle with chopped chives.
