Eggplant caviar is a dish that is famous in Greece, in Turkey and also in Lebanon.

It is served normally as an appetizer  with pita bread or Lebanese bread. It can also be used as a small dish coumpoundind the mezze.

It can also be served in small verrines decorated with breadsticks or with a basket of raw vegetables.

Ingredients

Olive oil

  1. In the bowl of the robot equipped with the flexible beater, pour the olive oil in order to heat it for 1minute at 320°F.
  2. Add the diced eggplant and peeled garlic. Set the speed controller to mix (speed 0) and caramelize for 4 minutes. Don't forget to add salt and pepper just before.
  3. Bake for 15 minutes at 200°F.
  4. Then put this mixture and the lime juice in the multifunction bowl equipped with the knife. Put the speed controller in position number 2 and mix it for 1 minute.
  5. Add the basil leaves washed and dried beforehand and briefly turn the P button 3 times.
  6. Let it cool before serving. Put it in a fruit bowl with a drizzle of olive oil or in verrines decorated with small basil leaves in order to serve your guests. Enjoy your meal.
