Black baking chocolate
450 grams
  1. Put the chocolate squares to melt in a salad bowl over a pan of hot water.
  2. Meanwhile, whisk the egg whites until stiff.
  3. Add the melted chocolate to the stiff egg white and whiskusing an electric whisk till you obtain a homogeneous mixture.
  4. Leave to chill in the fridge a few hours, the best is to consume the mousse the next day.
