A quick way to prepare your a fish fillet whether it is cod, halibut, trout etc… with a french flair. This dish can be served with spinach, chard, ratatouille, polenta or fresh pasta.

- Preheat the oven to 180° C (F).
- Wash the trout fillets, drain them and place them in an oiled oven dish, skin side down.
- Bake for about 20 minutes, watching the cooking.
- Meanwhile, prepare the sauce by mixing the pesto with the cream and set aside.
- Just before serving, heat the sauce, pour it on the plate and place the fillet on top.
