Here’s a fresh recipe which can be lightened simply by removing the bacon. You can also try another version with shrimp.

Ingredients

Metric US
cooked langoustine
18
lamb's lettuce
200 grams
Button mushroom
500 grams
smoked bacon
250 grams
Green asparagus
18
chervil
1 bunch
Sunflower oil
vinegar
  1. Cook the cleaned asparagus cleaned in salted boiling water for 10 to 15 minutes or in a pressure cooker for 5 minutes. Leave them to cool.
  2. Cook the bacon till brown in the pan. Leave them to cool too.
  3. Wash and chop the mushrooms.
  4. Place the lamb's lettuce on the plates, followed by the mushrooms, bacon, langoustines and asparagus.
  5. Make the salad dressing with the oil, vinegar, salt and pepper and pour over the salad. Decorate with chervil leaves.
