Ingredients

Metric US
baker's yeast
1.5 teaspoons
water
125 milliliters
Flour
300 grams
Salt
1.5 teaspoons
Butter
30 grams
milk
125 milliliters
honey
3 tablespoons
oatmeal
100 grams
  1. Mix yeast with warm water and let stand at least 10 minutes.
  2. Mix in a bowl the flour, salt, softened butter, warm milk, water and yeast, honey and 50 g of oatmeal until you obtain a soft and elastic dough.
  3. Cover the salad bowl with a damp cloth and let stand for 1h30 at room temperature.
  4. On a lightly floured work surface, place the dough that has risen and flatten to "degas", which means to chase the air.
  5. Cut it into 9 pieces that will be shaped into balls and let them rise again 1/2 hour.
  6. Preheat the oven to 230 °C.
  7. Then place the 9 balls of dough on the oven tray covered with the cooking mat.
  8. Sprinkle with remaining oatmeal and return to the shape of balls before baking for 20 minutes.
  9. Halfway through the baking when the rolls have turned to a beautiful golden color, cover them with a sheet of aluminum foil.
  10. Leave them to cool on a rack.
