Ingredients
- short pastry
- 1

- 180 milliliters
- Salt
- 1 teaspoon
- Mill pepper
- 1/4 teaspoon
- Chopped spinach
- 150 grams
- Grated Gruyère cheese
- 113.2 grams
- On a floured surface, roll out dough to 1/4-inch (5 mm) thickness. Gently press the dough into the bottom and up the side of a 9-inch (23 cm) diameter pie pan.
- Trim excess dough, leaving a 1-inch (2.5 cm) border. Fold the border under the pastry, press and flute the edge. With a fork, prick the pastry all over. Refrigerate for 30 minutes.
- Line pan with foil and fill with dried beans. Bake in lower third of preheated 400°F (200°C) oven for 15 minutes.
- Carefully remove dried beans and foil. Continue baking in oven for 5 minutes or until crust is lightly browned.
- Place pan on a rack and let cool.
- In a bowl, whisk together eggs, milk, salt and pepper.
- Spread spinach in cooled crust and cover with egg mixture. Sprinkle with cheese.
- Bake in preheated 375°F (190°C) oven for 15 minutes. Reduce temperature to 325°F (160°C) and continue baking for 20 minutes or until topping is golden brown (if necessary, cover crust with foil to prevent burning).
- Let stand for 5 minutes before cutting into wedges.
- You can prepare the quiche in advance, let it cool and cover it. It will keep for up to 3 days in the refrigerator or up to 3 months in the freezer, wrapped in aluminum foil.
