Green beans cooking time for Summer

As soon as the sun comes out, we think of enjoying fresh green beans recipe from the garden or the market as from June to September.

There is a good reason for this! Green beans (haricots verts in French) are appreciated for their delicate taste and high content of dietary fibre, vitamins and trace elements: a real cocktail of nutritional benefits for health !

Before cooking them, don’t forget to go through the step of de-stemming the french beans. To remove the stems from the beans, take a large handle, use a utility knife, align the stalks and slice the ends and repeat the process on the other side. You can de-string along the pods to make them more digestible.

  • Cooking time : Between 10 and 15 minutes in a pressure or steam cooker.
  • Practical tips: Count the minutes of cooking time from the moment you see the steam escape from your steamer and turn down the heat. Steamed beans enable to preserve the nutrients of the green bean.

✪ Cooking green beans in water:

  • Cooking Time: 15 to 20 minutes in a large pot of boiling water depending on the size of your beans.
  • Practical Tips: For crunchy beans, prefer short cooking times and for melt-in-the-mouth beans, cook longer.  After cooking, putting the green beans in ice water helps to preserve their beautiful green color because the cold water fixes the chlorophyll !

✪ Frying of green beans in a pan :

  • Cooking Time: About 12 minutes in a saute pan or bean casserole.
  • Practical advice: Firstly, blanch your beans in a pot of boiling water for 5 minutes. Heat the pan (over medium heat) with fat (butternut, olive oil drizzle) and saute the beans for about 12 minutes. You can also stir fry them if you wish. Onion (shallot preferably) or 2 teaspoons of crushed fresh garlic can be browned in the pan beforehand according to everyone’s taste.

✪ Tips for choosing the right fresh green beans !

Choose pods that are soft, fleshy with the minimum amount of strings (stringless beans) or grain as well as flawless and with a beautiful green colour. If you choose butter beans, they should have a nice yellowish colour. The best Fresh beans break automatically if you try to fold them.

There are several categories of beans: medium, fine or extra-fine. In any case, look for thin, long and firm pods. The larger the beans, the more likely they are to have strings.
