Lasagna cook time

Lasagna is a type of pasta of Italian origin made from wheat semolina  which is presented in the form of large sheets and wide strips also called lasagne noodles that date back to the Middle Ages!  Did you know that lasagna is said to be the oldest pasta and that it originally comes from the city of Naples?

In fact, the name of the pasta gave the name of the lasagna dish: a preparation made of alternating layers of pasta, cheese, meat and tomato sauce. The most famous version of this dish is certainly the one served with Bechamel sauce and Bolognese sauce (Emilia Romagna region). However, traditional Naples lasagna is made up of local Italian sausage, fried meatballs, hard-boiled eggs, ricotta cheese, mozzarella cheese sauced with a Neapolitan meat sauce. In any case, lasagna is baked in the oven!

How to successfully oven bake a good lasagna ?

Bolognese and white sauce lasagna, with vegetables, with cottage cheese, mushroom lasagne, classic lasagne with  ricotta spinach lasagna, a bubbly and exotic chicken curry homemade lasagne, vegetarian lasagna with Gruyère or parmesan cheese, sausage homemade lasagne with marinara sauce, mozzarella, mascarpone, gorgonzola, first of all you will need the right ingredients to make the best lasagna.

Before starting with special recipes, you need to know the basic recipe: that of Bolognese lasagna. But how do you get perfectly cooked lasagne (al dente)? With melt in the mouth pasta but which is not completely soft, a cooked Bolognese and an unburnt béchamel sauce? It is not complicated as long as you follow a few basic recommendations.

Preparation of the Bolognese sauce: In general, it is enough to prepare a good Bolognese sauce with fresh tomatoes, oregano, garlic and onions and olive oil, to brown ground beef meat and add it to the sauce.

Preparation of the béchamel sauce: butter, flour to be diluted in milk over high heat by beating vigorously with a light seasoning of nutmeg, pepper and salt. We try to obtain a fluid texture like that of custard so that the lasagna is as soft as you want it to be.

Make sure the lasagna is well assembled and layered: In a gratin dish, layers of béchamel sauce, bolognese sauce, lasagna leaves and cheese are alternated evenly until the dish is filled to the rim.

The trick: always start with a layer of tomato sauce or béchamel sauce to avoid that the pasta hangs on the bottom of the dish and always finish with a layer of sauce sprinkled with cheese.

On average, lasagna should be cooked in the oven for 25 to 30 minutes at 210°C/410 °F (Th.7).

To keep the lasagna soft and melting and not too dry, one technique is to cover your oven dish halfway through cooking with a sheet of aluminium foil, simply remove it 5 minutes before the end of cooking to have a crisp top layer !

Tip: lasagna can be prepared the day before (so that the sauce has time to soak the pasta) and cooked at the last minute. The important thing is not to miss the cooking!

Should the pasta be precooked for lasagna? It all depends on whether you use dry or fresh pasta. Fresh pasta should never be pre-cooked. On the other hand, dry pasta can possibly be “pre-cooked” by rehydrating it beforehand, if it is done properly. You can moisturize them to give them more flexibility for cooking by placing them for a few minutes in a hollow plate filled with warm water flavoured with herbs, such as thyme, fresh parsley or bay leaf.  This step should be well mastered because you will have to be careful not to overcook your pasta which would become too soft in the mouth.

How to control the filling cooking time ? For a beautiful homemade bolognese, try to lightly precook the minced beef to remove all excess water before plunging it into the tomato sauce, which should not simmer too long. If you want to make vegetarian lasagna, do not use raw or frozen vegetables because they are waterlogged and too long to cook, they may soften the pasta completely.

Can we cook the lasagna the day before? Yes, they can be prepared the day before to save time but be careful they may dry out after a second cooking. The tip: If you absolutely want to prepare your lasagna in advance, shorten the cooking time (15 minutes / 15 minutes) and continue cooking the next day. Otherwise, as mentioned above, prepare your entire dish but only cook it at the last minute. If you want to reheat a lasagna dish that has already started the day before, protect it with baking paper to prevent it from drying out.
