Ingredients

Metric US
Pour environ 15 petits choux
Butter
100 grams
Flour
150 grams
water
25 centiliters
Eggs

  1. Battre vos oeufs et tamiser la farine.
  2. Faire fondre le beurre à feu doux dans une casserole.
  3. Ajouter l'eau et porter à ébullition. Ajouter une pincée de sel pour une recette salée ou une cuillère à soupe de sucre pour recette sucrée.
  4. Mettre sur feu doux puis incorporer la farine en un seul trait. Tourner avec une spatule jusqu'à ce que la pâte se détache complètement des parois de la casserole (environ 5 minutes).
  5. Enlever du feu, mettre dans un récipient froid et laisser tiédir.
  6. Ajouter les oeufs en petites quantités, battre vigoureusement entre chaque ajout.
  7. Immédiatement dresser les choux à la cuillère ou à la poche à douille selon la forme souhaitée et mettre au four. Pour des petits choux faire cuire dans un four préchauffé à 180°C pendant 15 minutes.
